Typical product from Molise consisting of a mixture of lean first cut meat: shoulder, ham and bacon.
INGREDIENTS: PORK MEAT AND FAT, SALT, SPICES AND NATURAL FLAVOURINGS.

APPEARANCE
Round-shaped sausage with a smooth, dry and compact surface. Externally it is bright red in colour with whitish shades of typical vegetative mycelium.
Internally, when cut, the surface is bright red in colour, balanced by the presence of the fat parts inside.
Unmistakable and characteristic aroma, intense aroma of a typical seasoned and spiced product.

Description

PROCESSING PROCEDURE
The meat is minced and everything is seasoned with salt, black pepper and natural aromas of sweet red pepper, then the mixture is expertly stuffed into synthetic casings. The temperature and relative humidity are constantly monitored. The maturing process takes place over a period of approximately 60-80 days.

STORAGE
Storage Temperature: Refrigerated storage A + 4°C – U.R. Std. Product subject to the production of whitish superficial mycelium during maturation and aging due to mycelium typical of the product.
